Canon PowerShot SD450 Photo #1 Turkey

Brined overnight in a salty bath with star anise, then stuffed with home-grown oranges and coated in a sesame oil and olive oil mixture, smoked for three hours over hickory coals, and basted with a maple bourbon mustard glaze. I should have photographed the bird carved. Heritage turkeys are amazing: mostly dark meat and rich with flavor.
